If you give your tank a small feeding, then spot feed, I think you're safe most of the time (by distracting the cleaner shrimp), but is also depends on the tank size. I can get away with that in my 210 gallon, and I'm assuming you're looking to add them to your big tank too.

If you're looking for some healthy fish and sometimes clams, then Seaside is a good stop. Their coral selection is not the best. Tong's is hit-and-miss with healthy fish, but they have a good selection. They also have a decent coral selection, but are mostly overpriced.
