There shouldn't be any air at the top. Part of the reason I mentioned the bleeder. Try shutting it off and pulling the probe to remove the air. Should help

Looks a lot like the Geo, but more fun to build!! If I had one suggestion, based on my experience with the Geo, if you had a way to blead off air/CO2 at the top, it'd be very helpful. My Geo once running is awesome, but when getting things settled, the air at the top is a PIA. Just a thought.
