When pex fiorst came out this was true. I agree with attaining a letter from the manufactuer if you go with pex as I would do the same with copper or any pipeing used in the house for drinking water without purification. If you get to the nitty gritty of everything the details frighten everyone the idea of you getting a rat in your house big enoughf to chomp pex line is crazy though. If you feel safer with copper go with what makes you comfortable. Pex line is equivilant but better than baby bottles and water bottles you drink out of if you want to sum it up. I agree with flushing systems but thats with all new pipeing.
Do you know how much footage you will need?? Also how many drops per water source?? If you find this out the difference in price may not be all that bad. Also did you check out those shark bite fiittings?? Take care and if your worried about pipes wait till you get to texture and painting!!!!

Let me know what you choose to go with and have you checked all the copper out through out the house to see if it needs to be replaced?? some could be new install.
